Classic Beef Stroganoff

This classic beef stroganoff with mushrooms is a comforting, creamy, and hearty dish that's perfect for a satisfying meal. The combination of tender beef, flavorful mushrooms, and rich sauce served over noodles or rice is a time-honored favorite.
Ingredients
- 1 pound beef sirloin, thinly sliced
- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 pound of Blanc or Portobello mushrooms, cleaned and sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1/2 cup sour cream
- Salt and freshly ground black pepper to taste
- Chopped fresh parsley for garnish
- Cooked egg noodles or rice, for serving
Instructions
- In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the beef slices and sear until browned on all sides. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining butter, onion, and garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the sliced Portobello mushrooms and cook until they are soft, about 8 minutes.
- Sprinkle the flour over the mushrooms and stir well. Cook for another 2 minutes.
- Gradually add the beef broth and Worcestershire sauce, stirring continuously. Bring to a simmer and let the sauce thicken, about 5 minutes.
- Return the beef to the skillet and heat through. Reduce the heat to low and stir in the sour cream. Season with salt and pepper to taste. Heat gently but do not boil.
- Serve the beef stroganoff over cooked egg noodles or rice, garnished with fresh parsley.
Tips
To enhance the flavor, consider marinating the beef in a mixture of soy sauce and Worcestershire sauce for 30 minutes before cooking. For a lighter version, you can substitute the sour cream with Greek yogurt.
